Easy Meal that is also Diabetic Friendly: Sausage and Kraut Skillet Meal and Mexican Cornbread


Here are recipes for a quick and easy meal that can be enjoyed by the whole family including any diabetics.  The Sausage and Kraut Skillet Meal is ready in 35 to 40 minutes.  This dish has meat, vegetables, and fruit in one skillet.  Personally, I always enjoy cornbread with sauerkraut so I have added a cornbread recipe here.  Serve these recipes either together or separately.  You are sure to enjoy them.

SAUSAGE & KRAUT SKILLET MEAL

2 tbsp canola oil

1/4 cup diced onion

1/4 cup diced green bell pepper

3 cups Deli-Fresh Sauerkraut

1 cup diced apples

2 lbs smoked sausage

In a large heavy saucepan, heat the canola oil.  Add the onion and bell pepper and saute about 5 minutes until tender.  Add the sauerkraut and apples to the skillet.  Cover and cook over low heat for 25 to 30 minutes or until the apples are tender, stirring occasionally.

Meanwhile, saute sausage until browned.  Top the hot sauerkraut mixture with sausage and serve while hot.

Yield: 6 servings


MEXICAN CORNBREAD

1 cup self-rising cornmeal

1 cup shredded cheddar cheese

1 cup whole kernel corn

1 cup milk

1/2 cup chopped onion

1 jar (4-oz) diced pimiento, drained

1/3 cup butter

2 tbsp chopped jalapeno peppers (seeded)

1/2 tsp garlic powder

nonstick cooking spray

Preheat oven at 350 degrees.

Spray a 10-inch cast-iron skillet with the nonstick cooking spray; set aside.

Combine the cornmeal and milk together in a medium bowl.  Stir until mixed.  Add the remaining ingredients and mix well.  Pour into the prepared skillet and put in the oven.  Bake at 350 degrees for 45 minutes or until golden brown.  Cut into wedges and serve warm with butter.
